Hybrid Potato Curry



Bet that title got your attention 😉 since this is neither bombay potatoes or sag aloo, I couldn’t grace it with a name. It’s a great way to use up leftovers though, you would not believe how little food I had in when I made this!


About a cup steamed potatoes
2 tbsp tomato paste
200ml veggie stock
1 tsp onion powder
1 tsp garlic powder
Crack of salt
Pinch of pepper
1/2 tsp chilli flakes
1 tbsp mild curry powder
1/2 tsp tumeric
Handful spinach
1/4 frozen peas
1/4 cup Frozen onions


1. Fry off onions for a few mins, and add peas. Cook for another minute.
2. Whisk together tomato paste and stock together and add to pan. Also add spices and simmer for 5 mins.
3. Mix in cooked potatoes and very slightly mash them.
4. Lastly, add in spinach and allow to wilt.
